We found a coconut in the woods that was actually fresh and edible! Fran was reallllly excited about it :)

Major attempts to open it, and we were actually successful! A few sips were definitely worth it ;)

A few of my bests and I took a trip to The St. Regis Bahia Beach Resort in Puerto Rico earlier this month to celebrate Fran and Yujin's 30th birthdays, we well as Fran's bachelorette (bride-to-be in May!). We escaped just in time before the NYC blizzard hit to spend a blissful four days in paradise. The hospitality was incredible, and the food must have had to be the best ever at a resort, thanks to Chef Jean-Georges leading Fern, the main restaurant on property. The octopus and hamachi we had for dinner was out of this world. The pools were gorgeous, as well as the beach just steps from our room. Thank you so much to my girls for the memories of an unforgettable trip, and The St. Regis for an incredible stay. We also took a short trip into Old San Juan one of the days, so stay tuned for my next post on some beautifully colorful buildings, blue cobblestone streets, and delicious eats!
